Fish Biryani, Seer Fry, our readers must be wondering why we
are talking only about seafood. The reason is because we are going
to take you through the lush green Cubbon Park where in a corner
of the park, opposite the Century Club is the government fisheries
canteen. As we entered the canteen we smelt the deep-fried fish
and about 40 people were enjoying their lunch.
"This canteen was started in 1974
and to this day the standard of cooking and the taste has remained
the same," says a regular customer who comes here every
alternate day.
Chowdappa, marketing manager of this government canteen
says that, "There are at least a 1000 people who come here
every day and all of them relish what they eat."There are
around 6 varieties of fish prepared everyday. Most ofthe fish comes
form Mangalore. The fish are frozen and there is a cold storage
center in the premises.
The
prices are quite reasonable. A fish kabab costs you around Rs 20,
Fish Manchurian Rs 22, Prawn fry Rs 20, Fish Fingers Rs 25, Fish
Biryani Rs 25, Seer Fish Fry Rs 18.
We spoke to the cook there who was grinding masala for the curry.
Here he shares with us his recipe for making Fish Fillets.

Fillets
Ingredients
1 egg
2 tablespoons yellow mustard
1/2 teaspoon salt
Mashed potato flakes to coat, about 1 1/2 cups
1 1/2 pounds fish fillets (any thin white fish like flounder,
sole, etc.)
1/4-cup vegetable oil |
Method
Lightly beat the egg, mustard, and salt in a shallow dish. Place
the potato flakes in another shallow dish. If the fillets are
very large, cut them in half to make them easier to handle.
Heat the oil in a large skillet until hot. Dip the fish fillets
in the egg mixture then in the potato flakes. Fry the fish for
3-4 minutes on each side, until it is golden brown and flakes
easily with a fork. The potato flakes form a wonderful, crispy
golden crust around the fish while the mustard adds the perfect
flavor. |
