Some Recipes for Ganesh Chaturthi


Salt Kozhukkattai
Ingredients:

Rice flour 1 cup
Oil 3 tsp
Urad daal 1 cup
Salt 2 tsp
Green chillies 2
Water 1 cup
Method

  • For the crust

  • Fry the rice flour in a non-stick pan till it becomes moderately hot. Keep it aside.

  • Measure a cup of water into a non-stick pan. Let it boil.

  • When it boils vigourously, add 2 tsp oil, a pinch of salt, the roasted rice flour and stir well.

  • Keep stirring and once the water evaporates, take it off the stove.

  • Let it cool down to a bearable temperature.

  • Now knead the dough well, without any lumps.

  • For the filling:

  • Soak the urad daal in water for an hour. Drain.

  • Grind together the urad dhal, chillies and salt.

  • Do not add more than one spoon of water while grinding.

  • Put it in a non-stick pan over medium heat. Stir well.

  • After all the water evaporates, take it off the stove.
  • Finally

  • Spread oil over your left palm.

  • Take a small quantity of the kneaded dough.

  • Make it into a lime-sized ball.

  • Dip your right forefinger in oil.

  • Now shape the dough into a nice cup with your right finger making the
  • sunken portion of the cup.

  • Keep some filling into the cup.

  • Seal the top nicely with the sides of the cup.

  • The final product will look like an onion bulb.

  • Prepare all the kozhukkatais like this.

  • Steam in the idli cooker.

  • Do not take it out of the cooker when it is hot. It will break.

  • Allow it to cool inside the cooker for sometime.

  • This will hold the kozhukkattai together.

  • Modak
    Ingredients:

    These are round sweets /dumplings of Rice flour stuffed with Dry Fruits & Coconut
    For the Rice Dough

    Rice flour 3 cups

    Water 6 cups

    Oil 3 tsp
    For the Stuffing

    Coconut, grated 4 cups

    Sugar 2 cup

    Dry fruits 1/2 cup

    Milk 1/2 cup
    Method

  • For the Rice Dough

  • Boil the water & oil and remove from heat. To it add the rice flour, cover and allow it to cool. Later, knead well and keep aside.

    For the Stuffing

  • Mix all the ingredients mentioned under stuffing except milk.

  • Put this mixture on a medium heat and cook stirring all the time.

  • Then add the milk, mixing well and remove off the heat once it is totally dry.

    To Proceed

  • Make balls of the rice dough, make a small hollow in the center and place the stuffing in the middle.

  • Now join the open edges together and give it a shape like a whole garlic.

  • Steam these modaks for 10 minutes, take off, cool and keep in
    air-tight containers.

  • Khara Kadabu
    Ingredients:


    For Dough

    Rice flour 1 cup
    Oil 6 table spoons
    Salt to taste

    For fillings

    Channa dal (soaked for 3 hrs) 1 cup
    Green chillies 4
    Size onion 1
    Coriander leaves
    Salt to taste
    For the Stuffing

    Coconut, grated 4 cups

    Sugar 2 cup

    Dry fruits 1/2 cup

    Milk 1/2 cup
    Method


    To make Dough:

  • Boil 1 1/2 cup water in a vessel with salt & 1 spoon of oil.

  • When it starts boiling add rice flour & continuously stir it until it becomes a lump.

  • Allow it to cool.

  • Take small balls out of dough.

  • Make use of rolling pins & make rotis of 3 inch diameter.

  • To make fillings:
  • Grind channa dal chillies & coriander without adding water. (It should not be too smooth) To the above paste add finely cut onions & salt Now to make kadubu take rotis & fill it with the filling. Close it by bringing edges together & pressing with milk or water. Now steam this kadubus for 15 minutes. Serve this with coconut chutney!! .
